Classic Creamy Coleslaw Recipe

Coleslaw is a crisp, creamy, and refreshing side dish that’s perfect for everything from summer barbecues and picnics to topping tacos or pulled pork sandwiches. This classic version combines shredded cabbage and carrots with a tangy-sweet dressing that’s easy to whip up in minutes.

Ingredients

For the coleslaw mix:

  • 4 cups green cabbage, finely shredded
  • 1 cup purple cabbage, finely shredded (optional, for color)
  • 1 cup carrots, grated or julienned

For the dressing:

  • 3/4 cup mayonnaise
  • 1 1/2 tbsp apple cider vinegar (or lemon juice)
  • 1 tbsp sugar (adjust to taste)
  • 1 tsp Dijon mustard (optional, for extra tang)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the green cabbage, purple cabbage (if using), and carrots. Toss to mix evenly.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard (if using), salt, and pepper until smooth and creamy.
  3. Pour the dressing over the cabbage mixture and toss thoroughly until all the veggies are well coated.
  4. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld and the cabbage soften slightly.
  5. Taste and adjust seasoning before serving. Serve chilled.

This coleslaw is crisp, creamy, and delicious on its own or as a crunchy topping for sandwiches, burgers, and tacos.
