Classic Stuffed Peppers Recipe: A Hearty and Colorful Comfort Dish

Stuffed peppers are a wholesome, satisfying dish that combines vibrant bell peppers with a savory filling of ground meat, rice, and spices, all baked under a blanket of melted cheese. Perfect for a weeknight dinner or a cozy gathering, this dish is as versatile as it is delicious. Plus, it’s a great way to use up leftovers and sneak in some veggies.

Ingredients

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp tomato paste
  • 1/4 cup water or broth

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit all the peppers.
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Arrange the peppers upright in the prepared baking dish.
  3. In a skillet over medium heat, cook the ground beef (or turkey) until browned. Add chopped onion and garlic and sauté until softened, about 3–4 minutes.
  4. Stir in the drained tomatoes, cooked rice, tomato paste, Italian seasoning, salt, and pepper. Mix well and cook for another 2–3 minutes until heated through.
  5. Spoon the filling evenly into each pepper. Pour 1/4 cup water or broth into the bottom of the baking dish to keep the peppers moist during baking.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top of each pepper, and bake uncovered for another 10–15 minutes until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving. Garnish with chopped parsley if desired.
